Easy Healthy Superfood Breakfast Bars; Deliciously Ella

Hello hello hello! So after I posted my top healthy breakfasts post last week, quite a lot of people asked me for the recipe for the superfood bars I mentioned. I am hooked on these so I am really excited to be sharing this with you today. I don't do many baking/cooking posts but when I find a really good, easy, yummy healthy recipe, I promise to always share it with you; this is exactly what this is! Me and my Mum have been loving these recently and they seriously are amazing; they're easy to make, they fill you right up, they last longer than one day and they're full of superfoods oh plus, they're not naughty at all! What's not to love? I got this recipe from Deliciously Ella and have adapted it a little bit. Enjoy!


You will need;
(to make 20 bars)

- Oats - 400g
- Dates - 400g
- Raisins - 200g
- Water - 300ml
- Coconut Oil - 3 tablespoons
- Sunflower Seeds - 100g
- Chia Seeds - 4 table spoons 
- Cinnamon - 2 tea spoons

Pre-heat the oven to 200 degrees.

Mix the chia seeds with 16 drops of water - after around 10 minutes a gel will form so just leave this to form whilst you do the other bits. 

Pit the dates and put them in a sauce pan with the coconut oil - allow these to melt for about 5 minutes. The dates will go nice and soft. 


Next, place the dates and coconut oil into a blender and blend until you've got a smooth paste

Put your oats, raisins, sunflower seeds and cinnamon into a big bowl.






Add the date and coconut mix then stir the chia gel into it too.





Tadaaaaa - once it's mixed, you just need to bake!


Pop it into a baking tray and leave to bake for about 35 minutes - they will turn golden on the top - make sure you leave it to cool for 15 minutes before cutting them into bars, so it sets properly.


That's it! I know it kind of sounds like a lot of annoying ingredients but once you've got all these ingredients in your cupboard (I know they're staples in my house now - if you're into superfoods etc you'll probably have coconut oil, oats and seeds laying around anyway!), you can make these on a  weekly basis and then just store them for the next few days! These keep me so full and give me such a good energy boost and they're just fully natural and delicious. Goodbye sugary cereal bars! To make them even nicer, I like to dunk mine into a big blob of greek yoghurt or I guess if you really need a sugar fix, dip them into some of my healthy banana ice cream or some honey!

I honestly didn't think I would like these and I have never really eaten dates before but trust me, all of this blended together is heaven, it's sweet enough and you seriously don't need any added sugar!
