
Carbs get a bad rep. They really shouldn’t, we need carbs for energy. I once tried to give up carbs and it was the worst few days of my life, I had no fuel whatsoever. Life is about balance and carbs are part of a healthy diet, don’t let anyone tell you they’re not! As long as you’re eating the right carbs, you’re fine! I stick to wholewheat pasta and wholewheat rice where possible and I tend to avoid refined sugars, I also don’t eat white bread unless it’s fresh but I live by the 80/20 rule so on weekends, I’ll have some wine, pizza and Pringles because hey, why not. If you deprive yourself, you’ll only binge. Let’s talk about potatoes then, potatoes are completely natural, grown in the ground and you know what they say; if you can pick it or kill it, it’s good to eat (aka, natural things). Potatoes are a source of fibre, potassium and magnesium so they really deserve to be shouted about a little bit more. I love nothing more than a crispy jacket potato filled with protein rich tuna! Today, I wanted to show you one of my favourite potato recipes, showing you that carbs can be enjoyed as part of a healthy balanced diet!
