HEALTHY OAT AND FRUIT BARS RECIPE - ON THE GO ANYTIME BARS

I call these my on-the-go-anytime bars and they've saved my life more times than I can remember (I am ALWAYS hungry). It's incredibly hard to find healthy and filling food when you're on the go so I usually end up stuffing my face with crisps, the healthier kind but I'm not really getting any nutritional benefits. A few years ago my Mum found a delicious recipe for some healthy bars and has since taken inspiration from this to make her own batches of fruity, delicious and healthy bars. This is a really yummy and healthy recipe, one you can make on a Sunday night and pop in a tin for the next 5 days (if they don't all get eaten by then) and grab them when you're on the go, whether it's a quick breakfast, before the gym or tuck them in your handbag for on-the-go, you can have these healthy bars and my healthy banana bread on the go all week. INGREDIENTS:

- 2 CUPS OF SOFT DATES WITH STONES REMOVED
- 1 TABLESPOON OF CHIA SEEDS
- 2 CUPS OF OATS
- 2 CUPS OF SUGAR FREE PUFFED WHEAT
- 4 CHOPPED DRIED FIGS
- 2 TABLESPOONS OF SULTANAS
- 8 CHOPPED DRIED APRICOTS
- 2 TABLESPOONS OF NUT BUTTER (ANY YOU LIKE)
- 2 TABLESPOONS OF GROUND WALNUTS
- 2 TABLESPOONS OF SHREDDED COCONUT

METHOD:

- COVER DATES AND CHIA SEEDS IN BOILING WATER AND ALLOW THEM TO SOAK FOR AROUND 10 MINS

- BLEND THE MIXTURE UNTIL SMOOTH WITH AN ELECTRIC HAND BLENDER

- ADD ALL THE DRIED INGREDIENTS TO THE MIXTURE AND STIR IN BY HAND UNTIL THE MIXTURE IS FIRMISH - IF IT IS TOO FIRM, ADD A LITTLE MORE WATER TO SOFTEN

- PLACE THE MIXTURE IN A DEEP LINED BAKING TRAY AND BAKE FOR AROUND 40 MINS AT 160 DEGREES
