Easy, Quick, Healthy Recipes - My Healthy Supergreens Sweet Potato Mash Recipe

As you guys know, I am all about balance, the 80/20 rule and will never condone deprivation when it comes to eating. I'm a little bit in love with healthy cooking and think it came about when I first went to University. I just love cooking my own, home-made, healthy dishes. You know exactly what's in it if you cook it by yourself from scratch. When Young's invited me along to their cookery school in London to whip up my own healthy side dish to go with their new  Simply Bake range, I couldn't say no. Let's just say, healthy fuel was much needed after a busy day in London. Today, I'm sharing my super greens sweet potato mash with you and I hope you love it like I do. Prep time: 10 mins  Cook time: 25 mins
Serves: 4 (or two really hungry people)


INGREDIENTS:
4 sweet potatoes peeled and cut into large chunks
A pinch of salt
5-6 tablespoons of low fat spread
A mixture of onion, cabbage, kale or other leafy green veg of your choice
Half a cup of milk




I worked with Young's head chef, Serge Nollent, because I was under time restraints (it was like a Great British Bake Off, but for side dishes) and he helped me chop away! 

1    Chop your sweet potatoes into small pieces then boil the sweet potatoes. Cover with cold water and a pinch of salt, bring to the boil and then simmer until soft enough to mash (prick with a fork to test). 




Next, boil the greens in one pan – cover with cold water and a pinch of salt, bring to the boil and cook for around 4 – 5 mins.



Then, drain the sweet potatoes and veg in a colander

My favourite part, use a potato masher to mash the sweet potato with the spread and milk until nice and smooth



Last, gently stir in the vegetables and serve as a side dish


My dish is so incredibly easy to create but tastes so delicious and makes a really nutritious side dish with almost anything. I put mine with Young's new Simply Bake Cheese and Leek Cod and honestly, it tasted amazing. I'm not a fishy fish lover, I prefer seafood and things like cod but for me, this is perfect and it's a great way to get fish into my diet without it feeling too 'fishy'. The best part of taking part in the bake off for Young's? I got to eat it all at the end! It was a really fun night, thanks for having me!
